What Oh What to do with Leftovers

So my favorite way to use up all my left over is to make what I call deep fried Thanksgiving.

Here is how its done!!!!

Take your Favorite left overs and mix them together!

I take:
Mashed Potatoes
Gravy
Corn Pudding
Turkey
Left over Rolls

I mix potatoes,gravy,corn pudding,turkey(shred), flour and 1 egg. I mix them all really well and then roll them into medium sized balls. I then take and grind the left over rolls, I place them into a dish, I roll the balls of Thanksgiving goodness in the roll crumbs and then deep fry for about 4 to 5 m,in or until completely golden brown.I use my left over Horseradish cranberry sauce to dip in!

OMG these are so good and a great way to use up all those left overs!

Thanksgiving 2011

I love Thanksgiving, I love getting together with my family and my friends, I love sharing a great meal!

This is what I made this year for our families Thanksgiving

2 Turkey Breast both with Orange Marmalade Black Pepper Butter, and basted with fresh squeezed orange juice
 Corn Pudding
Brussels Sprouts with bacon and walnuts
Broccoli Casserole
Vermont and English White cheddar smashed potatoes( cooked in heavy cream and then smashed in the same cooking cream)
Corn
amazing Gravy with the orange turkey drippings(this was so good you would do shot of this)
Fresh Cranberry sauce
Fresh Horseradish cranberry sauce

we also had Ham with Crack gravy,  Hawaiian rolls, and homemade honey butter!

for dessert we had my Sister wonderful pumpkin cake balls( my daughters favy), my mom2 made a pumpkin tart with a ginger snap crust, we had traditional pumpkin pie, and my little brother and his wife made this AMAZING Carmel apple cake!

We had the most amazing dinner,company and day!

Adventures in Boxed meals

My son, who is blessed to have a home cooked meal almost everyday of the week,decided that he wanted to try Hamburger Helper (YIKES),

He says to me "mom why don't we ever eat Hamburger Helper? "I say because Mommy doesn't like it" and  He says " well all my friends eat it". So I buy a box of Hamburger Helper(reluctantly) and tonight I made it for him.

It was as awful as I remembered it, my daughter took one bite and said she wasn't eating that, but the boys they ate it. My oldest the asker of this meal eats his entire serving and says "mom, that wasn't bad, but I don't wanna eat it all the time" Me (Huge sigh of relief)

Its nights like tonight that I feel great about the food I feed my children and I feel good knowing that they will take my cooking over the boxed meals any days.

As a side note, I know that there are families out there that make these meals, and this is nothing against you, I believe that making dinner no matter from scratch or from box,that sitting down with your family is the most important thing to do.

But for me I'm off the hook on cooking the boxed meals again (at least for a while)

Blogging

It has been a while since I have blogged and I didn't realize that anyone even reads this silly thing.
To my surprise there are people who like to know what I feed my Family everyday.

I started this blog so that I could write about my family and the wonderful food that I am so blessed to be able to cook for them, I have neglect this blog for way too long!!!

Weekend of October 15th and 16th

Weekend cooking is my favorite time to cook, I don't have much time during the week to make amazing dinners, I make dinner during the week, but on the weekends I make happiness.

Saturday I made a slow roasted mustard rubbed pork roast with a orange chili glaze, with long grained rice and steamed broccoli.
I first rubbed the pork with whole grain mustard on all side, then I made a rub with my favorite spices and rubbed the entire pork roast on all sides, then I roasted the pork at 300 degrees for 2 hours, then at the last 30mins I added the orange glaze to the roast.

Orange glaze: I took bottled orange spring roll glaze ( found at Kroger's) added it to a pan with 2 tsp of soy sauce and my mustard BBQ sauce.( Make enough glaze for gravy after rice is done)

Steamed Broccoli: take 1 head of fresh broccoli cut of florets into bit sized pieces add them to a pot of boiling water cook until tender.

Long grained rice:The way to cook rice is 2:1 ratio, take 1 cup of rice and add it to 2 cups of boiling water that is seasoned with garlic powder and salt, let cook for 20mins covered NEVER open it, after the 20mins turn off heat and let sit for another 5-10mins for perfect fluffy steamed rice

Plate the entire meal like this, a good scoopful of rice first the add the broccoli, top with pieces of the sliced pork roast the drizzle with left over glaze!

This is such a flavorful and healthy meal!

Sunday dinner: I made Fried Chicken, Mashed Potatoes, corn and gravy

I started with the fried chicken, I have found that fried chicken can be scary for people who don't cook  that often, it is all about patients when it comes to frying chicken, if you rush it you will have burnt crust and raw chicken, fry the chicken at an even temp for a good 15-20mins depending on the size, I have also found that the trick to prefect fried chicken that is crispy and moist inside is to cook the chicken till golden on all side then put it in a 350 degree oven till done this will ensure that you chicken comes out perfect.

Mashed potatoes: take 6 russet potatoes boil till knife comes out clean, then drain well, I put the potatoes back in the hot pan to get rid of any left over moisture, then I add 2 tbsp of butter and I smash by hand then I add about 1/4 cup of sour cream, a little more butter and salt and pepper to taste. Mix together and serve warm

Make a gravy of your choice and I used frozen corn.

This is such a hearty, down home, warm meal that make you feel good all over.

For me the weekends are all about the food and the happiness that it brings to my family!

Sunday October 9th

Sunday dinner at it finest!
Sunday Gravy with creamy Parmesan cheese polenta, herb and garlic bread and chopped salad.

Sunday gravy which is the prize piece of this meal is:
1 flank steak, 1 pork roast, 1 pack of Italian sausages(cut in half) 2 cans of crushed tomatoes, 4 gloves of garlic sliced thin,1 tsp of cinnamon, parsley,basil,salt, pepper,red pepper flakes.
Brown all the meats on all sides,leave the casings on the sausages ( you will remove them in the last 30 mins) add to crock pot with tomatoes and seasonings let cook for 4-6hours, last 30mins cook with lid off crock pot, take the meats out of the crock pot, you will need to shred the flank steak, shred the pork roast and remove the casings from the sausages leave sausages whole do not break them up, add back to the sauce and let the gravy cook for 30mins uncovered.

Sunday gravy at its best! It was amazing served over polenta but was also very tasty on bread of your choice, you can also put it over pasta of your choice, I used rigatoni for my children.

this is a slow cooked meal but the taste in the end is amazing and it is worth every moment of the that you have to spend on it.

September 15th dinner

Tonight for dinner I made Spaghetti with meat sauce, Garlic kissed bread and salad!

This is something that I make very well it is thick and hearty like sauce cooked all day and I use short cuts to make this whole meal in 30min.

Here is how I do it:

I start with ground turkey 85/15 blend cause you need some fat to cook the meat(this can also be done with ground beef), in a sauce pan I heat 2 garlic gloves crushed and minced super fine, then I add the meat, I cook the turkey till it is cooked thru, then season with salt, pepper to taste and use and Italian seasoning mix.
Next I take 1 jar store bought sauce (use your favorite) if this was a weekend meal I would use homemade. Add 1/4 the jar of sauce to the meat mix let that simmer for 6-8 mins, stirring occasionally (***your heat should be on between high and medium high, you need the heat to reduce the sauce quickly***), then I add about 1/2 the remaining jar of sauce and I simmer that for another 6-8mins after that time I add 2 tablespoons of ketchup and simmer for another 6-8mins.
 While my sauce is cooking I make my pasta, I like a blend of angel hair and thin spaghetti, I take a large pan full of water, bring it to a rapid boil, once the water boils I add a healthy amount of salt to season the pasta, then i add the pasta as little or as much as you like, I let it come to a boil again then I turn off the heat, I let the pasta sit COVERED for 7 mins or until done to your liking, stir occasionally.
Next I make my garlic bread while my sauce is cooking down and my pasta is steeping away,I take 1 french bread loaf buttered or olive oiled,stick under the broiler till the desired brownness then I take a glove or 2 of garlic and rub my warm bread with it!
So now that I have everything going at once I go back to the sauce I stir the sauce as needed till my desired thickness, by taking the time to do the extra steps for the sauce like adding the ketcup you get the "Sunday sauce"look,feel,and taste on a week day. Right at the end I add a spoonful of pasta cooking water to make the sauce stick to the pasta.
I strain my pasta and take a tablespoon of butter put it on the end of a fork and brush thru the pasta(this helps the pasta not stick to itself when it cools)
I then plate the whole thing up, top it with yummy Parmesan cheese and throw together a salad and there you have a weekday Sunday sauce!

September 7th Dinner

Today was rain, cool, and just down right ugly, but days like today make me want to go home and cook all day.It make me want food that is heavy and fills you up and warms you up while eating it.

Dinner tonight was my sons 2nd favorite meal with a twist
Chicken fried turkey
Smashed potatoes loaded with sour cream and butter
Creamy smooth rich gravy
slow cooked beans

The twist was in the gravy, I made a gravy that taste just like the broth in beef strognoff but it was made for the chicken fried turkey;it was rich, creamy, silky and SOOOO tasty.

This meal filled us up and made us all thankful to be home with each other away from the rain!

The Smell of Fall

The start of fall is such a wonderful time for me and my family, it means time for fall decoration,pumpkin patches, apple orchards, hot cider and cozy couch time, it also means the start of some of my favorite foods.

Fall means soups, stews, chili's and mashed potatoes. All those meals that take hours to cook, make your house smell like the picture is a cook book and makes your soul feel full.

So lets put on our sweatshirts and pull up a soup and lets get started with Fall foods.

July 27th dinner

Tonight's dinner made me SOOOO happy, as well as my wonderful husband (which I make it cause its his favorite).

Tonight I made
Orzo with garlic Parmesan cream sauce
grilled steak, Shrimp and grilled chicken
Grilled asparagus

For dessert I made

Homemade cheesecake with fresh whip cream.

Gotta love a fancy dinner that is made at home for half the price of a fancy dinner out.

"What are you thankful for?"

" Thank you mommy for our food and our family and our friends, thank you"

This phrase is heard everyday at my house, at any restaurant and at every meal, followed by:

"Mommy what are you thankful for?"

My children at every meal, after everyone has sat down my son starts with "Thank you mommy, nanny,whatever restaurant we are at, for the food and our family and our friends, thank you" and my daughter goes around the table and ask EVERYONE, and I do mean everyone "What are you thankful for?" The thankful's range from what you are thankful for at that moment to what you have been thankful for years, it doesn't matter how big or how small the thankful is you just must have a thankful to share.

 I know that I am truly blessed to have children that make you stop and think for just a moment about all the good that there is in our life's and all the little and big things that we let slip by, they give our family the chance to remember those things, and really let the universe and all those in it how thankful we are.

In our family being thankful isn't a one time a year thing that happens on thanksgiving it happens every day, every night no matter how big or small the meal or how many people sharing the meal we are always reminded to be thankful.

So when you sit down for dinner tonight, or breakfast in the morning, or even lunch remember the words of my son and daughter, What are you thankful for!

July 14th dinner

So there are some days where 1 its just too darn hot to cook and 2 your just not feeling it but you know you have to feed your family. Well tonight was one of those night, so even tho I had no real desire to make a meal I did make something that is a kid and adult hit.

Pigs in a blanket ( no hot dogs YUCK O !!!!)

I use really good flaky biscuits, really good smoked sausage and shredded Colby jack cheese.
I also make what my sons calls my "famous" honey mustard which actually I learned from my mom growing up its what we used to eat. Also we had fresh plums and pretzels.

I really have to give this dinner credit to my mom cause she made this for lunch for us once and we have loved it ever since! thanks MOM

For desserts we had make your own banana splits!

This was so quick so easy and so tasty!

July 13th dinner

I like to think that I am the queen of homemade pizza and for Wednesday night dinner I made a very tasty pizza for my wonderful family
Dough:
First I started by making a very thin pizza dough ( recipe from cooks country)

Sauce:
Then I made a tomato based pizza sauce

Toppings:
I usually like to make pizza with TONS of flavor and toppings this time I went with ham not deli sliced ham but good Sunday dinner roast for hours ham, I diced it up into a very small dice, then I fried it in a pan till it was brown and crispy all around.

Cheese:
I usually like to use 2 to 3 types of cheese I think it gives good depth of flavor to the pizza.
Last night I used just mozzarella and just that because I wanted the ham to be the star!

So here's what I did ,apply sauce and Ham then a light layer of cheese and bake it till almost done then pull it out and add a ton of cheese to cover the pizza.The pizza comes out it has a nice thin crispy crust and its loaded with ham and cheese, the only bad thing is you have to let this pizza sit till cool otherwise the toppings leave the pizza and that is just no good.


I served with a side salad and fresh fruit.

Very Happy family with this dinner!

Monday night dinner

July 10th Monday Night

My husband was home for dinner tonight and I LOVE to make dinner for him, and he loves me making dinner for him.

Tonight we had
Grilled Smoked Sausage
2 Cheese Mac and Cheese
Fried Corn
Crispy fried potatoes

And just for my husband I made a 16oz porter house grilled to medium, he was a very happy man!

Gotta love dinner where everyone eats all there food and everyone is happy after!

July 9th Sunday Diner

Sunday is my favorite day of the week, it is always about family.

This Sunday July 9th was all about the grill

We made:
Grilled chicken breast with a honey, chili, BBQ glaze
Orzo with grilled pepper, onions, zucchini, asparagus, and grilled artichoke with balsamic and olive oil and good parm cheese
Good crusty bread with soft butter
Watermelon

Gotta love summer time dinners, I don't know how anyone survives the summer with out a grill, because nothing is better than a good grilled dinner.

Weekends

The weekends for me are about family, I am privileged to have such an amazingly close family I live just 2 blocks over from my moms and most weekends we spend together.

Our weekends revolve around what we are eating, from simple bucket of chicken from KFC to pulled pork slow cooked on the grill.

Sunday is for Sunday dinner and for those of you who have been part of this event, we do it up big there is always more food then you could possibly eat and more laughter than your body can stand.

When I was growing up we would always go to my Grandma Knipp's house for Sunday dinner and it was a production,when you walked in the door you can smell the dinner, hear the laughter and feel the love, my grandma in her small kitchen would turn out the most amazingly good food, and we all taking turns would stand in this small kitchen talking about our days, our family's, anything and most importantly for the girls of our family we would stand in the kitchen and study what Grandma made because if you wanted to make it yourself you had to watch because no recipes were given. My Grandma had 15 kids and there are hundreds of us grand and great grand kids and we all we squeeze into her small little house and if you were lucky and you got to eat at the table, now that was a good Sunday!

Now my moms house feels the same, I know that when I arrive to help with Sunday dinner that the love and laughter are waiting for me with just one turn of the door knob.

My kids now every Sunday are ready to go and be with our family because just like when I was growing up going to my Grandma's house, I want them to fell the same way I did when we open the door on Sundays at my Grandma's house, the only difference is, is there is always room at the big table for you no matter how old or how young the table never seems to be too full for family!

July 6th dinner

Some days you just wanna go simple, back to basics,

Tonight I made 3 cheese ( Colby Jack, Cheddar and American shreds) grilled cheese with bacon and Chips with ice cold lemonade.

Big Winner for the kids my children are in love with cheese of all kinds and add bacon and you have a sandwich my husband and myself are in love with.

This for me was perfect on a hot day it was quick, simple and so very YUMMY!

A little about my love of food

I had the pleasure of growing up in a home where there was always some sort of home cooked goodness, my mother is an amazing cook one of the best cooks I have ever had the privlige of eating from, I also have a grandmother who is a very down home cook and her food is amazingly good full of years of hard work and love.

So my passion for food runs deep in my soul, I now have the pleasure of cooking for my husband, my children and my very large family.
